Chef Joe, thank you for taking time to share your concerns.

I was shocked to read your comments given that during your time as our associate you did not communicate these concerns with me as the General Manager, the Food & Beverage Director or the Human Resources Manager. I would have appreciated the opportunity to immediately address the issues and provide the necessary training/counseling.

We are committed to proper food handling and sanitation. We are serve safe certified and in Oct. we had an unannounced visit by the County Health Inspector who provided a score of 98.
I apologize that you decided to leave Brasstown without allowing me the opportunity to address your concerns. We are always evaluating our processes with a focus on improving our guest and associate experiences.

I worked at this resort as a Chef for about a month. Do not eat here. I am warning all of you the sanitation discusting. They leave raw chicken next to ready to eat foods. They never where gloves for ready to eat foods. The kitcen is discusting hardly ever cleaned. They reuse rags that have been used to clean off raw chicken juice on counter tops for ready to eat foods. It's over priced and nothing is made from scratch it all comes out of a box and half of there food is cooked in a Microwave. This resort needs to be shut down and reopened with an entirely new staff.
